Special Diets / Re: Quinoa recipes

FYI - you can actually buy a Gluten fee 'cous cous' now. Its actually made from corn and its pretty tasty. Just in case you DH might like to try that - pretty sure that you can get it from Woolies. I'm pretty sure the brand is Freelicious.

Tips and Tricks / Re: EDC Pumpkin soup help please

I always put less water in to begin with as I like mine nice and thick. otherwise adding potato can help, or I also add a handful of cashews just to make it nice and creamy.

Does anyone have any ideas about what I could substitute the cheese with?? I've found it really hard to find wheat free cracker recipes and this one sounds great (except for the cheese part)

Mine was quite running when I made it, but I just added some corn flour to thicken it up.

Is there any special hints/tips for buying Okra, or is it pretty much just grab a handful and off ya go? I've never cooked with it before but have always wanted to try it as it's great to have new things to add to the vego diet.

Bread / Re: Dan's Gluten Free Loaf

OK thanks :)

I definitely will try again this week, if it tastes better than this one I'll be a happy woman! Finding good gluten free bread recipes that don't have a thousand different ingredients is soooooo hard.

I made this yesterday. It didn't look like the picture - but for some reason my bread never does! However it was super tasty. I also substituted Chia Seeds as I was out of Psyllium Husk.
It's pretty much been devoured by DH and I so a success I'd say!!

A fantastic accompaniment for soup.

I made this last night and it was really really good. I used butternut pumpkin instead of sweet potato and it was great. I'll definitely be making again although I'd make a few slight adjustments:

I'd make my pumpkin/potato more chunky as I found it just mushed into nothing and I like more chunky stews - but thats just a personal preference. I'd also add another can of kidney beans as it made sooooo much I just think it needs more beany goodness.
I'd use a fraction less water and when cooking leave off the MC so it reduces and thickens a little bit.

I'm also going to try it with cashew paste instead of peanut butter just from a better health aspect.

But overall a great recipe  :) We served with crusty flat bread and it was amazing! DH loved it!

Thanks Dashingden
