EDC Pumpkin soup help please

It's too runny, how can I thicken it up now I've made it please?

Cornflour or potato floiur will work as will adding mashed potatoes. I have made this recipe many times before and reduced the amount of chicken stock to 250g as my kids love it thicker so they can mush it up in their bowls! If the pumpkin you are using seems quite watery then definitely reduce the amount of water/stock you are adding. I think the 500g in the ingredient list is deliberately there to give you a watery soup. If you look at the tips it mentions to  reduce the amount of water according to how thick you like it.

I always put less water in to begin with as I like mine nice and thick. otherwise adding potato can help, or I also add a handful of cashews just to make it nice and creamy.

You could also try adding some red lentils - either cook them with the soup or, if adding them at the end, pre-cook them.

I  add a couple of tablespoons of couscous to my soup if I think it looks a bit thin. Usually about 10 minutes before the end of cooking time. Then everything gets blitzed together at the end and nobody knows,(until now),  ;)how I got such a lovely creamy thick soup.

Just cooked this this evening.

It was absolutely beautiful, I followed the tip in this thread about using half the amount of stock.

I'm really glad I did, as the soup would have been really runny.  250gm of stock was perfect though :)

Very tasty soup, my Wife even said it was the best pumpkin soup she's ever had!
