Yes, had the temperature at Varoma.  No I didn't re press varoma after moving them around - perhaps that's the problem.  Today I made "Sausages" tried to make sure that I didn't have all the steam vents covered - still some were more cooked than others.  Sausages were a "failure - I really think they need "fat" to work  :(  All trial and error!!!!

I made this recipe from the Full Steam Ahead book the other night (made a couple of tweaks - made it Salmon and Prawn Mouse and added some chives) - was really lovely!!!  Thumbs up on this one!!! :)

I made the swedish meatballs last night - and it was my first dismal failure with the TM.  I doubled the meat - as others have suggested - tried to make sure the steam vents were not all covered - even moed them around during cooking (which I more than doubled!!) - and my meatballs did not cook  :'( I ended up having to microwave them so the kids could eat!!!  What have I done wrong???  I am actually "testing" the varoma right now to make sure all is good!!!  I think I must have just overcrowded?????

Another question - does anyone get strange noises occasionally at say speed 9?  Also just made the marble cake from EDC and it didn't mix too well (please don't tell me my new friend is having a breakdown!!)

I would think that the beetroot juice may alter the flavour.  It is a really mild flavoured cake (almost a vanilla cupcake really) - the cream cheese frosting adds the flavour.  Try the beetroot - let us know!!!

I am also a new TM owner - you go a little crazy the first couple of week making way too much food - but it's all fun!!!

Bread / Brazilian Cheese Bread (Pao de-Queijo)

This is a great recipe if you are looking for a gluten free bread!



Name of Recipe: Brazilian Cheese Bread (Pao de-Queijo)
Adapted from recipe found at Rasa Malaysia
Makes approx 36

Ingredients:
1 egg, at room temperature
70g (1/3 cup) olive oil
160g (2/3 cup) milk *
320g (1 1/2 cups) tapioca flour **
70g (1/2) cup cheese (combination of parmesan and mozzarella)
1 tsp salt


Preparation:
Preheat oven to 200C.

Grease mini muffin pans very well with olive oil.

Into the bowl of the TM place the seed tapioca.  Process for 30 seconds on speed 9.  Scrape down the sides of the bowl and repeat.

Place all remaining ingredients in the bowl process for 30 seconds on speed 5, scrape down the bowl and repeat.  *At this point I found the mixture a little too thick, so with the motor still running I added more milk until the consistency was a little thinner - I added probably up to another 2/3 cup of milk - the consistency was still quite thick - but I could semi pour it into the moulds.

Place the mixture into the prepared tins, and bake in the oven for 20 minutes.  You may need to rotate the tins half way during baking to ensure even baking of all the bread.

Remove from tins and serve warm.


Hints/Tips:  The original recipe called for 2/3 cup milk - but I think you need twice that amount - start with the stated amount and gradually add until you get a semi liquid consistency) it will still be quite "stiff" put a little more liquid.

These little breads are best eaten straight from the oven - they tend to go a bit doughy when they cool!   :)

The ribs were great - but got absolutely rave reviews about the garlic bread!!!!!  Everyone said best meal this year (LOL) - will try and post the recipes on my blog tomorrow ..... www.catecancook.blogspot.com  - ps - already have the basic BBQ sauce recipe there (just not made in the TMX - look under ribs - one of my very early recipes!

I am so smug with all I made today in the TMX - I am just in love with this site - thanks to you all (best of all I love the peeling garlic tip!!!!)

Thank you so much for all the tips here in this forum!  I am still learning my way around - and really not sure if I am using this site correctly - but I will get there!

Today I have made a BBQ sauce (for our ribs) - made chookies bread roll recipe - but made baguettes which I aim to turn into garlic bread - (peeled the garlic - LOVE THAT TIP - no more smelly fingers!!).  Also made avocado butter to spread on our roasted corn - and am now airing out the bowl (also love that tip!!! - BBQ sauce very smelly!!) - oh and did I mention made the garlic butter (from my own butter).

Thanks guys - can't wait to learn more from you all - I will try and post my recipes either here or on my blog tomorrow (it is still holiday time!!)
