I had some left over apricot halves after making the apricot chicken risotto from the EDC so used them to make this slice. The slice is so delicious! The almond meal base is really tasty especially with the juicy apricots on top. I didn't have any apricot jam to glaze the top so I just used some strawberry jam I made last week and it was fine. Whole family have been eating the slice all morning!

Great recipe Amy. I made these today for a morning tea and they were all eaten up by mums and kids. They were delicious!!! Best thing was that the kids didn't even know there were veges in there. Next time I'm thinking I might also put in some blended up capsicum (just to increase the hidden vege count!).
Thanks again, I love my mini quiches and was looking for a good TM recipe - this one is perfect.

Lol, I second that! Great advice! I too have very small children. I generally try to get the hard chopping (the noisy parts) out of the way before they go to bed. If I'm going to cook dinner while they are napping, I *try* to read through the recipe before they go down and do the noisy things before the nap. Then the less noisy bits after they are asleep (as usually the noisy chopping stuff comes first anyway). Hope that makes sense!

Yummo, thanks for converting and posting this recipe. I made these tonight for my kids (who hate veges). DS (3) ate three all at once and DD (1) ate two. Neither realised there were veges in there. I wonder whether DH will realise when he has one?

Haha, yeah I know, that's what I thought too! The recipe was pretty simple to make too, managed to make them with DS (3) and DD (1) hanging off me at the time! Good luck with them, hope you enjoy them as much as we did.

This is great! I would love a second bowl and blade set but didn't want to pay $395 for it!! I've just emailed my consultant so hopefully she is able to do a demo for me in June. Thanks for the heads up on the June promo.

Well, everyone ate it (and with a 1 year old and a 2 year old - getting them to eat is not always easy!!) so I'm going to say that they liked it! Yum yum yum Netstar. You clever girl

Thanks! I really enjoyed making the pasta with my pasta maker - so much easier with the TM making the dough!! Can't wait to make more now.

Sorry it's taken me a while to get back to this thread - been busy cooking in the TM! Lol! Here is a picture of the spinach and ricotta ravioli that I ended up making. It took a while to get the hang of the pasta maker (especially with a 2 year old that insisted on helping!) but in the end it turned out pretty well (although I probably need to roll the pasta a little thinner as it was a bit too thick)! I served it with sundried tomato pesto.
I used the basic pasta recipe from My Way of Cooking (adapting it as suggested at the bottom for spinach pasta) and then mixed up some ricotta, garlic, coon tasty cheese to use in the middle of the pasta.

Just wondering, do many of you keep your magazines? I have about 2 shelves in my bookcase full of my Super Food Ideas magazines but I don't go back to them that often (although I do around Christmas and Easter time to get some inspiration!). I just can't bear to part with them.

My kids love the Latina spinach and ricotta tortellini (that's the green tortellini with the ricotta filling). I'm going to try to replicate it now that I have a TMX and also a new pasta machine. I think I will use the egg pasta recipe from My Way of Cooking (which has instructions for making the green pasta using spinach leaves). Does anyone have any recommendations for how to make the ricotta filling? And has anyone seen any good instructions on the web about how to actually form the tortellini? Thanks in advance for any suggestions!!

I have a subscription to Super Food Ideas. I've had it for about 4 years now (it's Christmas present keeps getting renewed ). It is probably one of the best food magazines I've read. I love getting it in the mail each month! The recipes are simple and they are always geared towards seasonal foods and have ideas for upcoming events (eg. Christmas). I also find their articles interesting (always about nutrition, how to use different types of foods etc). Since getting my TM (only a month ago now), I've been going back through my old favourite editions of the magazine in an attempt to convert them!! The other good thing about the magazine is that it is part of the taste.com.au website so if I can't remember where the recipe is, I can just search it on their website.
