I have made this lots of times and it never lasts long in our house because it's so yummy. I love it's dense texture

I will say that I do tweak it a fair bit, playing around with sugar amounts and different flours. I have also subbed in zuchinni and carrot and it has still worked out great.

Added Half an onion at the start and 2 big handfuls of spinach before blending. Turned out great and a beautiful shade of green too :)

My husband has been asking me to make these for him ever since the Christmas food hit the supermarket shelves. I don't usually like Fruit Mince Pies so I have been dragging my feet a little with it (and having 2 little kids doesn't help either) but I tried these at the Festive Flavours cooking class at the weekend and they were delicious. I can't wait to make them now, just need some child free time so I can have a go at them :)

I was looking for a super easy dinner tonight and I found this one. It was so easy and very yummy. I threw in a handful of sundried tomatoes for a but of a different flavour. Next time I will add some onion and spinach as well.

Thanks for a great recipe, just what I needed tonight!

I made this tonight for dinner and it really is a very adaptable recipe.

I didn't have any cheese so I added in a couple more eggs, used buttermilk instead of milk (just made a huge batch of butter), no bacon but added a big tin of tuna and I used about a cup of zucchini. Next time I will try some sliced tomatoes on top  :)

I am nearly due with my 2nd baby and have been craving lemons like crazy for the past few weeks. I finally got around to making the lemonade but used some stevia instead of sugar.

It's really good and I have nearly finished it off already!!

Will definitely be making more of this over the next few weeks.

Starters and Snacks / Re: Beetroot, Parmesan and Cashew dip

My husband loves this dip but we leave out the parmesan. I prefer the dip with raw fresh beetroot (gives it a yummy earthy flavour) but my husband likes the sweeter, smoother taste with canned beetroot. Either way, it's a regular in our house and our nearly 3-year-old loves it too.

Made this tonight for dessert and it was delicious but a little too sweet for me so next time I will try less sugar. Thanks for a great recipe :)

Just had my first go at these and probably won't again. I've just had one warm out of the oven and it is light, fluffy and delicious but my mixture was so wet and I ended up adding heaps more flour just so I could get it out of the bowl! It was far too much mucking around for my liking when other scones are easier and just as nice....

I also used watery homemade buttermilk. Maybe that affected the mixture? They still rose and taste great though...

I wanted to avoid the egg white so whizzed 300g of frozen berries and a couple of splashes of coconut milk and it was delicious! A little bit tart without the sugar, but didn't miss it at all.
