I made this last night, it was fantastic! I would suggest though that less cream would be better. It wasnt thick enough so I added 2 teasp cornflour but less cream may mean it thickens more, I would leave the thermo cup off to help it thicken but apart from that it was the best Ive made, very fussy hubby also enthusiastic as was daughter who tried the leftovers

i have used the light carnation coconut milk, do you think thats the issue, i ws trying to keep it low fat but maybe the wrong thing to do?

just wondered if anyone else has use issues with cream/coconut milk seperating while cooking sauce dishes, ive noticed it with the chicken chilli and basil, also with the red curry chicken, help!
