Vegetable Bake

Hi,
Just wanted a recipe for a vegetable bake. Either one that you just chuck all of the veggies in or one that has roasted veggies in it. I have had one before somewhere and loved it but not sure what was in it. My preferred veg are potato. pumpkin, carrots, onion and zucchini. Not sure if you need a sauce over top or just some feta or something. Any ideas appreciated. Thanks

I'd just steam some vegies in the varoma haybray, make a batch of cheese sauce and use however much of it you need to top the vegies, sprinkle with a breadcrumb/cheese mixture and bake until brown.  Freeze any leftover cheese sauce for next time.

I would start with a vegetable stew (I make these just about every week in the winter).  Literally toss everything into the pot - whatever vegies you want, I also add rinsed barley and red lentils as well as raw cashews, tin of red kidney beans, tin of tomatoes, tomato puree if you like, vege V8 juice, tofu, HP sauce, soya sauce ... not necessarily all of these things at the same time, of course, but I literally toss in everything I can lay my hands on (I use the barley, lentils, cashews, kidney beans, etc. to help my protein intake), it always seems to taste good at the end.  You can make as much or as little as you want, but I always make a huge pot full and put extras into the freezer for next time.  In reality, this is pretty well a one pot meal by itself and may be a bit 'rustic' for a lot of people.

After that, follow JD's suggestion of cheese sauce (or mashed potatoes) and go from there.

I would throw in any veggies cooked, with some herbs, then either a white sauce or an italian tomato sauce, sprinkle cheese in the top & put in oven. French onions soup mix is nice through potato bakes so I would think it would  be nice through a veg bake.

My DH makes a vegie bake without sauce and it is very nice. He simply slices his vegies really thin and then bakes it.  The last one he made he used potatoes, sweet potatoes, onion, capsicum and tomatoes. He often puts cheese on it.
May all dairy items in your fridge be of questionable vintage.

Hi everyone
Thanks so much for the ideas. Have to make it tomorrow so will have to choose which way to go now. I love the sound of adding a tomato based sauce, thanks Halex, or may consider just what cookie suggested, keeping it a bit plainer. I have never heard of a stew like yours cuilidh, sounded very interesting, may try this one another time. Judydawn thanks for you input wanted to try and get away from the white sauce thing as I wanted a change. Once again thanks to all for your suggestions.
