I would start with a vegetable stew (I make these just about every week in the winter). Literally toss everything into the pot - whatever vegies you want, I also add rinsed barley and red lentils as well as raw cashews, tin of red kidney beans, tin of tomatoes, tomato puree if you like, vege V8 juice, tofu, HP sauce, soya sauce ... not necessarily all of these things at the same time, of course, but I literally toss in everything I can lay my hands on (I use the barley, lentils, cashews, kidney beans, etc. to help my protein intake), it always seems to taste good at the end. You can make as much or as little as you want, but I always make a huge pot full and put extras into the freezer for next time. In reality, this is pretty well a one pot meal by itself and may be a bit 'rustic' for a lot of people.
After that, follow JD's suggestion of cheese sauce (or mashed potatoes) and go from there.
