Cranberry and Almond Biscotti
« on: November 07, 2012, 06:02:42 am »
I thought I would share this recipe as it is so yummy and very easy.  I converted it for the Thermomix from www.taste.com.au

110g Raw Sugar
280g Plain Flour
70g Cranberries
90g Raw Almonds
3 Eggs

Preheat oven to 160c.
Place sugar into TM bowl and mill 10 secs, sp 10.
Add all other ingredients and mix 40 secs,  :-:, sp 4.
Knead dough 1 1/2 mins, interval speed.
Turn dough out onto a baking tray lined with baking paper.  Shape into a log and press along top of log to flatten slightly.
Bake for 30-40 mins, remove from oven and cool.
Cut log into 1/2cm thick slices, place on baking tray and cook for another 12-15 mins until hard and crispy.

I hope you enjoy these as much as we do!  :)

I love biscotti, thanks.  I've never thought of making it in the tmx.

Hi. I'm baking the log as we speak. Was wondering what temperature to bake it at once sliced. Also 160? Thanks.
