Lambs lettuce Salad with pumpkin seeds

Name of Recipe:  Lambs lettuce Salad with pumpkin seeds
Number of People: 4
Ingredients:

c30g pumpkin seeds
c 300g lambs lettuce, washed
50g orange juice
30g pumpkin seed oil
10g balsamic vinegar
quarter tsp salt
c 2 pinches of pepper
c 3 tbsp fresh herbs, chopped finely.  Eg chives, lemon balm, sorrel


Preparation:

1.  Add the 30 g pumpkin seeds to the tm bowl and grind 3 sec / Turbo

2.  Insert the butterfly whisk.  Roast 3 min / 90oC / 1.  Remove and leave to cool.

3.  Put the lambs lettuce in a salad bowl.

4.  Put the juice, oil, vinegar, salt & pepper into the tm bowl.  Mix 30 secs / 3, then pour over lettuce.

5.  Stir the herbs through the salad to mix well.  Divide between 4 plates, and scatter over the chopped pumpkin seeds.

Tips/Hints:  If desired, garnish with orange or mandarin pieces.

Learn something every day - never seen pumpkin seed oil - must go to the wrong shops  ???

I haven't seen it outside of the farmer's markets in Germany myself.  I made this tonight, but used walnut oil as a substitute.  Also, I didn't have lambs lettuce, so I just used the lettuce mix that I had.  It was nice, the dressing was nice, but it didn't ring my bells as a main meal salad.  It needed some chicken breast or meat of some description with it (which would stop it being vegetarian, of course!)  Anyone got ideas of how to 'fill it out' both in terms of flavour and being a sustaining meal but still leave it vegetarian?

My DH and DD had it as a side salad, and loved it in that role.  But for me as a main meal - no, it needs something extra.  If I'm not eating meat with it (actually, it would be great with liver) then I'll stick to using it as a side salad.  I'll definitely make it again, though.  It was very nice.

For me - just the other part of the pumpkin that is not on the list - the flesh - served warm with goats cheese or a mild feta woould be the answer.

Ooooh yes!  What a brilliant idea - why didn't I think of that?!  That would be delicious.  I'll try that next time.  I'm about to venture onto the allotment for the first time in 5 weeks.  So I'll see if any of my squash or pumpkin have survived the neglect!!
