Jenny, let us know how this worked with the cocount milk, please. It seems as though my DH may have developed a lactose intolerance (still waiting the results of tests / food experiments) and if this works with cocount milk it could be a good desert for him (and me!) to eat.
Oooooppps, hang on, does white chocolate have a dairy component? - I have never used white chocolate so am not too sure about that.

I found half a bag of frozen berries in the back of the fridge last night so I might give this a go with them as fresh berries are a little pricey at the moment.
I'd be keen to hear how the coconut milk version tastes, too.

We had this for dessert tonight. I haven't made it with normal milk, so I can't compare to what it 'should' have been like. It was very nice - with the coconut milk it was definitely not as light in texture as a mousse - a bit more solid and stayed set at room temperature. We couldn't taste the chocolate at all, so you could probably leave it out and still get a similar result. I just checked the chocolate ingredients and our 'white melts' had 20% milk solids.
I will try again sometime - once with normal milk to see what I'm comparing to, and then again with coconut milk, when I'll also cut down on the cornflour as I think it won't need as much.
Here's my attempt at uploading a photo - not that it really shows that much, but you could dress it up more with a bit of foam or cream.

Ooh, well done Jenny.
I wonder if I keep the white chocolate in, use coconut milk, but lose the cornflour if it will still set?

I think you would need some cornflour - I was thinking dropping it from 30gm to 20 gm and seeing what happens.

Just put it in the fridge. Only 300gms of frozen berries and no coconut milk so followed as written.
It certainly tastes very good!

I made this again, as per Isi's recipe, as I wanted to see what the texture was intended to be, since I used coconut milk the first time. The texture with the cow's milk was lighter, but both versions are very nice.
