Where abouts is it, or should I say what book is it in?

Has he more than one booklet out CP63?  Mine is mainly Thai flavoured food but that cooking class was quite a while ago and he has probably done more since.

Is Nico's recipe more than rice cooked in TMX and flavored ,  stuffed, rolled in bread crumbs and cooked in oil.? what I am asking is there any thing special about this recipe.

Know where you are coming from Chookie.  Don't people use leftover risotto for arancini?

The main type of arancini I make is with  ragł suace  consist of meat, peas, and mozzarella. The way my mum and nonna made

I use arborio rice or any short grain rice
And spianch and ricotta for vegetarians

I would like to see Nico’s  recipe too

"Entertaining with Nico", p6. Great price - its $5, available from a consultant. Lots of lovely recipes in it.

Tip: its better if you have another set of hands to help you get a production line going...
