Egg Free Aioli (and/or Egg Free Mayo)

Name of Recipe: Egg-Free Aioli (see hints and tips for Mayo)

Ingredients:
2-3 cloves of garlic (i used 3 small ones - was quite strong)
150g milk
1 1/2 tsp salt
450g oil (corn or sunflower oil - olive oil is a bit strong)
juice of 1/2 lemon

Preparation:
Chop garlic 6sec on speed 6

Add milk and salt and mix for 20sec on speed 7

Set speed to position 4-5 and have MC in place

Pour oil in a gentle stream onto lid. Will automatically 'suck' oil in.

Take about 4mins to add in all the oil.

At the end add the lemon juice onto the lid, and mix for another 30secs, so Aioli sets.


Tips/Hints:

Add a dash of Sweet Paprika and you'll have a great dressing for prawns.

If you omit the garlic and add 2 tsp of mustard you'll have a great Egg Free Mayo.

This Aioli is so yummy, espeically with homemade crackers... very addictive. :)

Thanks Alina, I saw a recipe for egg free mayo somewhere, thought that's a good idea, then lost it.  Now it's here forever

Made this for the first time tonight for DS number 4 as he is finally starting to try some salad items  :-)) - did he try it? NO!!!

Aside from that ... I have to say that we were all VERY impressed with it. It could possibly become our regular mayo - with the egg mayo being made for demo's :)

I didn't have any dijon mustard or lemon, but taking Bron's advice again and not letting it stop me from making a recipe lol I used Australian mustard that was in the fridge and needed using up and white vinegar,
