Mushroom Sauce (Spanish Recipe)
« on: December 18, 2011, 11:26:48 am »
Name of Recipe:  Salsa de Setas (Mushroom Sauce) – not tested

Nuts are confusing in Spanish - 'nueces' can refer to nuts in general, but also 'walnuts'.  Nuts in general are also called 'frutos secos' as are dried fruits.  Also 'pelado' can mean shelled or peeled, so if making this recipe, bear this in mind as I am not sure if 'pelar' in this case means shell or peel.  It would be difficult to peel walnuts, unlike almonds, but the nuts referred to may just mean nuts in general.  If you feel that 100g walnuts after shelling is too little then increase the quantity.  Confusing or what?  JB

Serves:  Not stated

Ingredients:
100g walnuts
25g seasonal mushrooms
50g soft cheese
125g cream
Salt
Nutmeg

Preparation:
Shell the nuts, tip them into the  *: and grind 5 seconds / Speed 6.
Add the cream and cheese, season with salt and a pinch of nutmeg.
Program 15 minutes / 90° / Speed 2.
Add the mushrooms, briefly press Turbo and set for a further 15 minutes / 90° / Speed 2.

Tips/Hints:  It is a perfect sauce to accompany meats, especially sirloin or tenderloin.  If the sauce is too thick, you can add a little milk to it.

Origin:  This is a translation of a recipe in Salsas y Aliños con Thermomix (Susaeta Ediciones)

Ha, ha.  My fingers are OK, but am prone to sciatica and have to keep getting up and walking around after typing each recipe :(

Goodness Fundj, a back operation does not sound pleasant at all, but if it has helped you, then that is brilliant  :)
