Quick Strawberry Jam Ice-cream

I came across this recipe in Ping's Pickings blogspot and thought I'd give it a go as it was so easy.


Name of Recipe: Strawberry Jam Ice-cream  
Number of People: This quantity 2-3 people but it could be increased
Ingredients:
1/2 cup strawberry jam (I used Tenina's from FFS)
1/4 cup thickened cream (65g)
1/4 cup skim milk (55g)
1/2 cup cream extra (130g) - lightly beaten until fluffy. Because it was such a small amount, I used a stick blender for this.

Preparation:

Mix the jam, cream and milk together in the TM bowl - 10 sec/speed 5.
Fold through the beaten cream with a spatula.
Scrape into a small container and place in the freezer - it will set solid.  
Remove from fridge before serving.

Kimmyh - Have whipped this up for children's dessert tonight. Really quick to make. Have frozen it into 4 silicone cupcake moulds which are a great size for my children. Should be easy to pop out into their bowls to serve.

Looks great Judy. I think I could use lactose free cream and milk to make this for SD :)

I should imagine this would be tasty. I put a jar of sloppy mulberry jam into some icecream I made a while back and it was lovely.
May all dairy items in your fridge be of questionable vintage.

It is very tasty and a great, fast way to use up excess berry jam Cookie.

Give it a go lactose free Amy and see what SD thinks of it.

Kimmyh why haven't I thought of this before 😳really felt like some ice cream tonight (it's so hot in Perth) but mine is a solid block and couldn't be bothers messing around waiting for it to soften (yes, both lazy and impatient, and hot...). I might soften it a bit over ths slightly cooler weekend and fill some silicon moulds for instant gratification.

Mind you, now I'll eat more of it 😉

A good way to use up the home made strawberry jam my FIL keeps giving me! DD7 is the only jam eater in the house, and she doesn't like his jam (haven't got the heart to tell him). His marmalade however, is to DIE for!
