Cooking times??
« on: May 17, 2010, 06:52:29 am »
Hi there

I am new to this forum and fairly new to my thermomix. Now I have a question.... hope it will not sound silly. But, the cooking times. When following recipes from my basic TM books I first set time, then temperature then speed. I notice that it takes a while to get to temperature. So if it says 1 min, 100 degrees, speed 5 it is not even at 100 degrees before it stops. Can someone please explain how I should be going about this situation to ensure I am cooking correclty (if it even makes sense as I have written it!!)

Also how do I know when to cook with or without the little clear lid thing?

Thanks

reaching the desired temperature has been accounted for in the recipe within the given time. Don't be tempted to add boiling or hot water to bring it up to the temperature unless this what the recipe specifies.

leaving the MC on or off will most times be advised in recipe. when it is not, just put on if you would normally put the saucepan lid on if using the stove or leave off if you normally wouldn't have the saucepan lid on. (A tip from Thermomixer).

I used to worry about this a lot when I first started using my TMX.    All of the TMX recipes times include that to get the ingredients up to heat but when it is only a small time (eg 1 minute or so), then if the ingredients are very cold (or your kitchen is cold) , you may not get to the required temperature in time.

In the end, I try to work out how important it is for it to get to the temperature.  If I think it is important, then I set the machine for another minute (and try to remember to reset the temperature!) and keep an eye on it until it reaches the temperature at which point I switch it off, set the timer to zero and proceed to the next stage.

The best part is you will soon get to know your machine and you will wonder why you asked this question.  No question is a silly one on this forum, we have all been there and experienced doubts ourselves so we certainly welcome any question from anyone. Others learn from the answers as well.  Good luck with your cooking, the more you do the sooner you will be in total control.

KLC 79,  This is a very good ?,  It is the one thing that concerned me most when I 1st.  got my TMX.  But I soon realized that the time/ heat had been calculated in the recipe,  well in most cases.
