Dinner party suggestions needed!

DH's folks and aunt and uncle are coming for dinner tomorrow night.  I am going to make Nico's Chilli Basil chicken for mains, but I think I need a second dish to go with it (other than Bron's garlic rice ;) ).  Any suggestions?  I am all Indian-ed out, prefer something more Asian...

Making individual lemon meringue pies for dessert, as I was so chuffed with the way mine worked on the weekend.  I kept looking at it admiringly, until it got gobbled up!

Hi Caroline.

How about a Thai sweet and sour salad?  I haven't converted this but you could very easily make up the salad dressing in your TM.

Thai Sweet and sour Salad.

Dressing ingredients:

1 clove garlic
1 long red fresh chilli (more if you like it hot)
1 ½ tbls fish sauce
3 tbls lemon juice
3 tbls sugar (or grated palm sugar)
2 tbls crushed roasted peanuts
1tbls dried shrimp (optional)

Salad ingredients:

100gm carrot, shredded
2 green beans – cut into 2.5cm lengths
100gm white cabbage, shredded (optional – I sometime omit this and use more beans and lettuce instead)
2 tomatoes, chopped into cubes
1 lettuce, separated into leaves.

Method:

Make up dressing in a glass jar so you can shake it before pouring over salad.  Adjust the sugar/fish sauce/lemon juice to taste.

Arrange lettuce leaves in a shallow serving dish.  Top with salad ingredients (toss in a separate bowl first).  Pour over dressing just before serving. 
 
This is really nice with any meat dish and some steamed rice.

This is my rough conversion - think it should work this way, but haven't actually tried it out.  ??? ???

Thai Sweet and sour Salad.

Chop peanuts in TM by pulsing once – set aside.
Blitz dried shrimp – speed 8, 10 secs – set aside.
Grate palm sugar if using  - speed 8 until fine – set aside
Chop chill and garlic speed 6-7, 5 secs
Add sugar, lemon juice, fish sauce, shrimp and peanuts. Speed 3, 10secs.
Pour into a glass jar so you can shake it before pouring over salad.  Adjust the sugar/fish sauce/lemon juice to taste. (if not using for a while add peanuts later to stop them going soggy.)

Arrange lettuce leaves in a shallow serving dish.  Top with salad ingredients (toss in a separate bowl first).  Pour dressing over just before serving.

Great choice for a main Caroline.  When I saw the posting I was going to suggest this very dish, imagine my surprise when I read your thread :D :D  I like it served with just plain steamed vegies and rice so that the star of the night is the chicken dish and nothing detracts from it.  I use Asian greens to keep the theme going.  No matter what you end up doing, your in-laws, Aunt & Uncle will be very impressed, have a great night.

earth mumma I'm comin to your dinner party!!  :D I was just going to suggest steamed carrot and zucchini ribbons - so 'noice' with salt, pepper and olive oil.  ;)

All went well :)  I am going to try and convert the Pad Thai recipe, as I think it is better than the Cyndi O'Meara one.  Added some sugar to the EDC shortcrust pastry- was much nicer.

Hi Caroline.  Did the salad dressing turn out o.k?  I am going to make it this week to have as a side to omlette soup (Thai style).  I might have a go at baked bananas for dessert  Haven't made these in years, but it is very quick and zI tyhink my kids would like them now.  :D
