Rubyslipper, I nearly always make double bread, or cut a loaf in 1/2 , wrap it in foil and freeze. Make sure it is cold before you freeze it. To use frozen loaf, just leave on bench, about 1/2 hour to defrost. For frozen rolls or bread stick, can be popped in to the oven still wrapped and semi- thawed. Pretty much any bread can be frozen.
