Best bread?
« on: August 22, 2010, 04:42:12 am »
Hi all

I am struggling to find the right time to make some bread. Is there one that keeps well or freezes well? That way it doesn't matter when it gets made it can be enjoyed before it becomes a rock! Lol

Many thanks

Rubyslipper,  I nearly always make double bread,  or cut a loaf in 1/2 ,  wrap it in foil and freeze.  Make sure it is cold before you freeze it.  To use frozen loaf, just leave on bench, about 1/2 hour to defrost.   For frozen rolls or bread stick,  can be popped in to the oven still wrapped and semi- thawed.  Pretty much any bread can be frozen.  Hope this helps.

We absolutely loooove this bread - and it is still good 3-4 days later, at least in this weather.

I always slice my bread with an electric knife and pack it in the freezer. I don't eat toooooooo much then.

I second the electric knife.  I laughed at my hubby when he came home from the tip (of all places!) with a brand new electric knife, but I was soon converted when I saw how easy it was to cut the bread.

Another question here about the right time for making bread.....

If you make bread routinely, do you make it in the morning, and it is ready for lunch?  Or can you make in the afternoon or night, leave it over night to rise and finish it in the morning?

I try to get it made for lunch but it often goes into the afternoon. If it is too hot to slice and freeze when I go to bed I cover it with a teatowel and do it the next day. I'm sure you'll work out a routine that suits you.

I think the important thing about timing is that it works for you and your family.  There are many variables involved.

Sometimes I make bread at night immediately after dinner.  That's usually just enough time to rise, bake and cool.

Other times I make bread in the morning, leaving dh to supervise the rise in the tin and baking.  He's really enjoying being part of the process.
