Ham and Vegetable Pasta Bake

Ham and Vegetable Pasta Bake:
Number of People 6:
Ingredients:
20g parmesan
60g tasty cheese
300g pasta
2 tablespoons olive oil
1 onion
100g button mushrooms
1 clove garlic
1 zucchini
1/4 cup parsley
150g chopped leg ham
4 eggs


Preparation:
Set oven to 1800C
1. Grate cheeses and parsley in TMX and set aside.
2. Cook pasta (see edc) and place in a casserole dish and cover.
3. Chop zucchini and parsley in TMX and set aside.
4. Chop onion and garlic. Speed 3/4 for 1 or so seconds.
5. Add oil and sliced mushrooms and cook 100) for 5 minutes.
6. Add zucchini and parsley and ham. Mix on speed 3  :-: for a few seconds.
7. Stir this mixture through the pasta with half of the cheese.
8. Crack the eggs into the bowl and beat on speed 4 for 5 seconds.
9. Pour the eggs over the pasta mixture and stir well.
10.Sprinkle the rest of the cheese over the top.
11.Bake for 30-40 minutes. I served mine with a tossed salad.

This recipe is modified from the Woolworths magazine "Fresh"
May all dairy items in your fridge be of questionable vintage.

I think you could hide lots of vegies in this one.

Yum Cookie.  I am looking forward to trying this. I would like to have a pasta bake option for the family using eggs instead of bechamel or cheese sauce. :)

Looks great Cookie. I'm thinking I could slide this one past the kids if I blitzed the mushrooms and put extra ham or bacon in it.  ;)
