Multigrain/Seed Loaf Rolls - suggestions needed
« on: February 01, 2012, 06:51:18 am »
I'm a TM newbie and have tried the 5 seed loaf recipe from EDC a couple of times.  I don't have any bread tins so I've tried forming the dough into rather sticky rolls but haven't had much success.  The rolls tend to come out pretty flat.

Can you give me any tips on how to modify the recipe to suit rolls or alternative recipes to try that will give me a nice fluffy seed or multigrain roll?

Thanks,
Ros

ros why not try No Fuss rolls substituting the white flour for your multigrain flour mix and Isi's Normal Bread. Just have a practice on the first go and see if it works out - I am sure it will as bread is very fun and forgiving.

Hints:
Let your dough double in size for at least an hour. Some people leave in the TM jug until it reaches the MC hole.
Tip your dough onto a slightly floured bench or thermomix mat
If its too sticky, lightly flour your hands and sprinkle a tiny bit on top of the dough as you give it a couple of hand kneads
Sticky bread seems to be lighter bread, so don't keep adding the flour
Cut your portions as evenly as possible, and roll into raised "rissoles" (don't flatten), then turn on your oven - the 2nd rise should be about done as the oven reaches the correct temperature.

Ros,  follow CP's advice.  You don't need a 'Bread " tin.  You can use a cake loaf tin,  just make sure you line it with cooking paper.

Thanks guys. I don't have any tins so I will keep trying the rolls. Also I'm overseas so can't get any of the bread mixes so have to make it from scratch.

I just made another batch and they turned out much better.  I left them to rise for over an hour this time.

What should the cooking time be?  EDC says 45 mins for the loaf but I find 25-30mins is enough for the rolls.

Cheers,

Ros

Rolls usually take 15-25 mins dependingin your oven. If you tap the bottom of the roll it should sound hollow. As far as including grains. Just throw them through the hole with 30 sec to go when kneading. You can add them to any recipe. Because the 5 seed bread is quite a wet mix that would be why your rolls are turning out flat.

I use Isi's recipes or this one and just add lots of different sorts of seeds.
