I use this recipe to replace some butter in my baking
Apple Purée
I got this recipe from easycooking.ca
Ingredients
60g water
juice of 1/2 lemon
4 apples, peeled, cored, and quartered
1/4 tsp. ground cinnamon (optional)
Directions
1. Place water and lemon juice into TM bowl; with blades running on speed 7, slowly drop prepared
apples in through the lid
2. After last apple, turn off speed and scrape down sides of bowl, using spatula
3. Add cinnamon; cook for 10 min. at 90 degrees on speed 1
4. Puree an additional 10 sec. on speed 8
5. Cool and serve
Note: If you prefer a sweeter taste, add 30g sugar with the water and lemon juice. For a smoother apple sauce, simply mix longer on speed 8.

Well I discovered that the apple purée will last around 3 weeks I the fridge. Just made another batch today so I could make bimby chocolate cake

Thanks for the recipe. I love making apple purée! Aren't the apples gorgeous at the moment? I can't get enough of them- my kids go through whole bags for school lunch boxes and on cold nights I make a batch of apple purée with cinnamon and stir a little bit of thickened cream in it for dessert or put a crumble topping on it and bake in the oven.Yum!

Yum that sounds great too. My kids eat quiet a few apples too. They mainly love golden delicious. I use big cooking apples for my purée. I'm still experimenting with what recipes work and what don't with replacing half the butter with apple purée. Bimby choc cake is one that works really well, and still tastes great

This is yummy and so easy. I've only just made it so it is still hot but I'm planning on using it with yogurt. I like the sound of the crumble. When you say you use it in place of some butter, how much do you use? For example, if it asks for 120g of butter would you substitute 30g, 40g? And is it substituted like for like? So a recipe asks for 120g butter, do you put in say 30g of sauce plus 90g of butter?

This is brazens way of reducing fats Brumington
'you can replace up to half the sugar and oil/butter in a cake with apple sauce
make the apple sauce by filling the thermomix with cored & quartered apples (can also use a few pears if they are overripe). add about 100g or so of water. cook for 7-10 mins at 90' speed 4.
I freeze it in small portions, around 150-180g so it's ready to go '

I reduce butter by half ad replace with apple purée. If recipe asks for 100g butter I add 50g butter 50g apple purée
Great way to reduce some fat without compromising taste. Doesn't work with biscuits though. But you can often reduce the butter by up to half without to much difference. Biscuits just don't seem to spread so much
