Peppery Herb Crusted Steak
« on: May 20, 2012, 03:11:39 pm »
Name of Recipe: Peppery Herb Crusted Steak (adapted from losebabyweight.com.au)
Number of People:2
Ingredients:

3 teaspoons dried thyme
3 teaspoons black peppercorns
2 teaspoons fennel seeds
2 teaspoons rock salt
2 bay leaves
3 tablespoons olive oil
2 beef steaks (I used Porterhouse steaks)

2 onions, peeled and cut into thick slices

Bernaise sauce (see recipe on forum)

Preparation:

Preheat oven to 200C fan forced.

Put the thyme, peppercorns, fennel seeds, rock salt and bay leaves into the TMX bowl and mill for 20 seconds – Speed 9.

Remove into a bowl and add olive oil. Mix and then rub mixture over both sides of beef fillet.

Heat 2 tablespoons of oil in a heavy-based saucepan on med-high heat.
Fry until browned on all sides.

Meanwhile, chop onions into thick slices and put in the bottom of a baking dish.

Put the beef fillet on top of the onions and place in the oven for 20 mins (check to see if cooked through).

Optional: Wrap the meat in foil and leave to stand for 10 minutes before serving.

Meanwhile, make the Bernaise sauce as per forum recipe under condiments and sauces.

Serve Bernaise sauce over beef fillets and with boiled veges.

The steak and sauce go very well together.

Here is a photo of just the steaks when finished cooking in oven:

Here is one with the sauce:

Tips/Hints:

Take eggs out of fridge from now beginning of recipe for bernaise sauce so not cold.

Gert - it was great . Dh gave it 4.5/5.00, I gave it 4 as the steak was far to well done for me. I would cook the onions first then add the steak at about 14 minutes. The bearnaise sauce was great. I hate tarragon so used oregano. Also I did not put the sauce through a sieve. It was fine as is.

JulieO - I halved the recipe even though it was still for 2 serves and it was the perfect amount for us.  Gave great flavour without it being too hot or peppery IYKWIM. Will def make again. Thankyou.

The recipe and photos look great but I'm not sure if the Bearnaise sauce is conducive to losing baby weight ( I'm only referring to your source of the recipe)!!!

Merlin - you are right....they did have a low fat version but there were too many steps etc so I just used the one from the forum.

I'm trying to make some of the recipes on that site correctly and cutting out the majority of snacks in the evening...so I'm making a start. ;)

I'll leave now. It's 1.30 here, 3.30 at Gert's. I wonder if I'll make it? :-\

Yup it was good. I could not believe it but when I picked up what I  thought was the LAST bit of steak there was another under it so I am marinating it in Tamarind paste  as per the beef rending recipe so will post that  tomorrow arvo. This freezer is deceiving  being deeper than I thought.  Got two sticks of Kabana I  have to use but I don't know what to do with it yet.

Too late for the peppery beef but start now and you can make it for the Rendang. Come on over.
