JulieO's Cottage Pie

Putting this here so you will all be able to find it at any time - it is part TMX so opted for this section rather than the non TMX one as I'm sure some of you will cook and mash your potato in the TMX  as well as the chopping of the vegies - JD

COTTAGE PIE
about 500g beef mince, premium heart smart quality
1 onion, quartered
2 cloves garlic
6 or 7 mushrooms, sliced
400g tin chopped tomatoes
about 1 tsp sugar
Heaped tsp Dijon mustard
Good slug Worcestershire sauce
Dash soy sauce
Good slug red wine          
1 stick celery, cut into chunks
1 large carrot,       “        “            
Head of broccoli incl stem, cut in chunks
About ½ of a sweet potato, peeled and cut in chunks                              
Beef stock, used 1 ½ cups today
Sprinkle of Tenina’s chicken stock granules
Cracked black pepper

A couple of spoonfuls of Dry Onion Soup Mix - recipe below
Creamy mashed potatoes
Tasty cheese (optional – I didn’t use today)

Add about 1 tbsp oil to TM bowl.
Add onion and garlic to bowl.  Chop 2 secs/speed 5. Scrape to a plate.  
Place rest of veg in bowl and chop about 12 secs/speed 8. You may need to stop and stir with a spatula and then carry on.  Remove to a plate.

Heat a large casserole pot, scrape onion/garlic mixture into pot and gently fry onion and garlic until golden and tender.  
Add mince and using a wooden spoon, break up any chunks and cook until browned.
Add mushrooms, cook stirring until they start to cook down releasing some of their juices.
Add tin of tomatoes, Dijon, sauces, sugar and red wine.  Give a good stir, then add the chopped up veg and beef stock, ground black pepper and bring to the boil.  Reduce heat, cover and simmer for about 1 hour, adding some frozen peas, (added peas & corn today) in the last few mins.  Check seasoning.

Meanwhile, boil some potatoes until tender, drain and press through ricer (or use masher) back into the hot, dry pot.  Add some warmed milk and butter and stir with wooden spoon until butter has melted and potatoes creamy. Add a sprinkle of the dry soup mix and stir to combine.

Spoon mince mixture into individual baking pots,(or one large dish if prefer).  Spread with mash and sprinkle with cheese if using.  Place under grill until cheese has melted/or potatoes have turned golden.

Use any veg that you have in the fridge at the time, zucchini, corn, potato, sweet potato just to name a few.

DRY ONION SOUP MIX
2 tblsp dried onion flakes
1½ tsp dried parsley
1 tsp onion powder
1 tsp turmeric (can leave out)  I used ¼ tsp
½ tsp celery seed
½ tsp salt
½ tsp sugar
¼ tsp ground pepper

Mix together and keep in an airtight container for up to 6 months.

JD -  made the base for this yesterday and just finished it off with the mashed potato this morning (in the TMX). Comfort food on a wet day here in Adelaide went down well. Made enough for 6 serves so I have frozen some of the base for another day. Thanks Julie.

Julie can you please give me a link to the French onion soup mix recipe you used. I'm sure it isn't mine.

As I said before in the What's for Dinner thread, we had this tonight and everyone loved it. Very tasty and filling.

Just seen this Judy.  I really thought I got the dried onion soup mix from you, but obviously not  ???  Supposed to be a substitute for French onion soup mix.  Not to make into soup but to add as a seasoning.

Will also add the photo of the cottage pie for the above recipe.  ;D

I probably provided you with the link to it Julie.  I made the base for this one this afternoon and will finish it off tomorrow with the mash.  Must say it felt strange cooking on the stove top after all this time using the TMX for virtually everything.
