I made the 1,2,3,4 pancakes for the kids after school today using gluten free plain flour. Very quick and the kids devoured the entire lot. My kids prefer large flat pancakes so this amount of batter only made about 4 large pancakes but even so is an easy recipe to remember and even though it is a simple one it seems to be a versatile 'keep handy' one for starving kids after school. I think I'll make another batch for lunch boxes as well as a good standby for weekend breakfasts. I also thought that they can be used as savoury pancakes/crepes as there is no sugar in the batter, only a pinch of salt - I guess if you wanted sweet pancakes just add some sugar but I prefer to avoid it in the batter as my kids enjoy their pancakes with some sugar and a squeeze of lemon on top anyway.

I made these this morning. I used plain flour and let them rest for the 30 minutes that it says in the book (Does anyone know why you need to let it rest?). They were much nicer than I expected. I usually make fluffy plump little pikelets and the batter for these pancakes is very runny and creates thin pancakes. We had them served with some maple syrup and a little pinch of sugar and they were very nice. I agree with the PP, they would be very suited to savoury dishes aswell as sweet 4/5

I always stand my pancake mix for 30 mins. They hold together better. The thin ones are then easier to turn over.

That makes sense Fundj and achookwoman. I thought it would have something to do with the flour. I didn't have any trouble with them falling apart and they were easy to turn so I will stick with letting them sit for 30 mins in future now that I know there is a good reason to.
Halex what are you having trouble with? I made the batter and let it sit in the TMX bowl for 30 mins. Then I heated the frypan to a medium heat and used a little oil and then poured the pancakes directly from the TMX jug. I didn't make large ones, I had 3 medium sized pancakes to the pan.

Depends how big you want them Hally. You can make them really big and then roll them up, or you could make the small and stack them on the plate

Mine were only about 6cm diameter, that must be why mine were easy to flip! I have enough trouble flipping a pan sized omellette, I'm not game enough to try large pancakes!

Okay, so probably 4-5 tablespoons of mixture. You can swirl the pan to get a nice round pancake and then let it cook until the bubbles appear. Then you flip it
Like Thermo Mrs indicated, smaller ones will probably be easier for you to flip Hally

I have the recipe but haven't cooked them yet. If the mixture is really thick, hopefully it should ooze out into a nice circle anyway
