Suggestions for fat free sweet treats please?
« on: June 03, 2012, 04:11:39 pm »
Does anyone have any fat-free sweet treats recipes, especially involving chocolates, that they could recommend? My DH has been working reallly hard fixing up our investment property for sale and so to say thanks I'd like to make him some sweet treats. I have been baking a few cakes which he has enjoyed but he is also trying to loose weight (only has to look at food to put on 10 kgs) so fat-free means he can indulge without feeling guilty or complaining that I'm trying to fatten him up. :)

Fat free is so different to sugar free.

why not just cut down the amount  of sugar in them, or use pureed apples for sweetening.

Now if some one has fat free chocolate, we would like that.  maybe check out quirkeyjo's blog.

Fat free toffees ect, but have loads of sugar in them.

Use daibetic chocolate, it has less sugar. Grate it and use it in a cake made with apple sauce instead of butter. Or use Grapeseed Oil instead of butter. I did that yesterday and you couldn't tell the difference. Quirky Jo say 3/4 amount of oil. So 200g butter = 150g oil.
Exercise is a dirty word... Every time I hear it, I wash my mouth out with chocolate

The almond bread in the GF book, page 49 is fat free Margaret.  I have changed it to be more like the one I always used to make pre-TMX so this is what I do.

Almond bread recipe
3 egg whites (room temperature)
1/2 tsp cream of tartar
85g castor sugar
120g plain white flour
120g raw almonds

Make sure the TM bowl is perfectly clean and fat free before beginning to beat egg whites.
Insert butterfly and place egg whites and cream of tartar in the bowl.  Beat 4 mins/37o/Speed 3 with the MC off until the egg whites are stiff.  Slowly add castor sugar whilst still beating on speed 3 with no heat.  This takes around 2 minutes.
Reduce to speed 2 and add plain flour & almonds. Mix for approx 3-4 seconds or until mixture is completely combined.  Tip mixture into a small lined log tin (loaf tin) and bake for 30 minutes in a moderate (180oC oven).  Allow to cool.
Wrap almond log in alfoil and store in the fridge for 2 days.  Remove wrapping and finely slice the log into 2mm thick slices.
Place slices onto a baking tray to dry in a cool oven 100oC for at least 20 minutes or until completely dried and crisp.  Leave on tray to cool then store in an airtight container.

yes I have made it several times. It has a pleasant lemony flavour. The texture was different due to it using eggs as a riser.  It is almost half way to being a pudding rather than a cake. It does slice though. It needs to be eaten and not saved as a cake. When I have mentioned it to friends, they think is some kind of joke and that it must be non existent without the usual ingredients.

Low-fat chocolate custard is easy, just use skim milk, cocoa powder and not too much sugar. Yummy with banana, or with a scoop of low-fat ice cream dolloped in the middle :D

MEP we love this and it is healthy. If you want to you could put a thin spread of butter or margarine.
It is really easy to make too. I use sultana bran in it, but plain bran (processed) is fine. Allbran type bran.
May all dairy items in your fridge be of questionable vintage.

Dot, could I just check if it is only the zest of the oranges and lemons used? Sounds great, I am keen to give this one a go :)
