Newbie from Northside Brisbane
« on: June 06, 2012, 12:27:54 pm »
Hi everyone,

I got my Thermomix on the weekend and am loving it so far.

Have made: ( bold is problems I had )
Custard and Chocolate Custard (EDC) ( found too thick so will try more liquid next time?? )
Veggie Stock (EDC)
Easy Carbonara (off here)
Quick Coconut Curry (off here)
Chorizo and Capsicum Risotto (off here)
Raspberry Sorbet (EDC)
Chili Con Carne (EDC) (not enough spice - might add more chili next time or different herbs/spices)
Banana Bread (off here)
Zucchini Slice (off here) (the veggies were too mushed up so will have to reduce time/speed when doing the grating)
Grating cheese (parmasan and cheddar - not a huge fan off how it turns out )

I am looking for some quick all in one meals to make on nights when I need to get dinner on the table in 30-40mins after getting home from work to feed the kids (2yo and 3.5yo).

Look forward to coming in here and trying out all the yummy recipes.

Bec

Welcome to the forum Bec. My kids are about the same age, and I also need to feed them when tired and grumpy after childcare, my best so far is Nigella's pasta and meatballs, pasta alla carbonara, macaroni cheese, bangers & mash, tuna and macaroni bake (all on here), plus creamy tomato and salami fettucini from EDC. If any of them don't have many veggies, I've just pureed in extras, e.g.) in macaroni & cheese I added cauliflower and corn. -Some of these only take 20 minutes and they are all all-in-one meals -too easy  :)

Hi Bec, welcome to the forum.  The girls have given you some great ideas for quick meals. It sounds as if you are going great guns with your new kitchen hand.

Thanks for all the welcomes :)

Cornish Cream - that recipe sounds good, might try that one soon.

Bubbles - thanks for all the ideas, I have heard yummy things about the Creamy Tomato and Salami Fettucini.  Thanks for the ideas about adding extra veggies - do you just puree them at the start of the recipe??

Well for the Tomato & Salami Fettuccini I added more when you add capsicum & zucchini. And yes, for the others I do the same, add them when you have to chop some veggies at the beginning and then cook them with the sauce. The other thing I've been doing to save time is cook 2-3 meals like this on the weekend(which really doesn't take long, 1-1.5 hours), and putting them in casserole dishes in the fridge, then when I get home from work all I have to do is stick it in the oven to heat up, and go and play with my kids for half an hour before tea-bliss! :D :D :D
I have found if I keep the lid on the casserole dish, and stir it once or twice whilst heating up, it doesn't dry out the pasta or anything.
BTW I've just realised my list was mainly pasta dishes-we do have more variety than just pasta in our house lol!  :)

Hi Bec and welcome.
I have 2 kids too, and make a couple of meals on the weekend, for when I get home from work.

Bafs chicken in varoma is brilliant.
