I'm making Ragu alla bolognese from a recipe that has been handed down through a few generations (hope my friend gave all the instructions and ingredients ... LOL). How important is the red wine in the recipe and will it matter if I add it in latter, say, about an hours time when I buy it? I've already deviated from the recipe a bit (which I was told not to do) by using 1kg of beef mince rather than half beef and half pork as I don't eat pork. Will that matter?Thanks in advance.Mich
