Gert i have something to drop in the bottles to make it sparkling. I think it is probable ready for the apple essence then i leave 24 hours and then bottle. It does come with a syphon and i can see it could get interesting. My DD gave it to me in November, given the need to keep the temp etween 18-28 i am glad i didnt do it earlier.Thanks for sharing your knowlege. X
