sun shining and clear blue sky ATM, quite cold tho.  :)
Girls still asleep, so I just peeled a whole 10kg bag of potatoes for the freezer  :o About to peel kumara now.

Thats a lot of potatoes. I have never frozen potatoes. Do you just peel & freeze & why ???

Thats a lot of potatoes. I have never frozen potatoes. Do you just peel & freeze & why ???

why? because we have a roast dinner most nights, and if I had to prepare potatoes every day it would take a lot more last minute effort, doing them all at once means one lot of peeling, and one lot of peelings to get rid of, then can just clean the sink properly and relax in knowing they are done for the next fortnight! Also once they are done they can't sprout of anything - saving $$ and waste.  :)
what do I do? I peel, boil then drain and put out on trays til they are cold and dry, then freeze. once frozen I put into bags and return to the freezer.  :D
to cook them I just put them frozen onto an oven tray, spray or brush with oil and cook for 45-60min on 180-200deg (whatever the rest of the meal needs to be cooked on) and once cooked, serve & eat.  :D
Have also cooked them in my Actifry (adding a bit of oil) with great results too.  ;)
If they are properly dry when frozen, cooking them like this results in crisp outsides and soft fluffy insides.
Also, if I want to do mash, I have the potatoes already peeled and boiled, making mash a lot quicker.  ;D

At my place, kumara is done the same way, but pumpkin is just peeled, cut and frozen raw.  :)

As Judy said, anything I can do in advance is a great help.

Astarra, that's brilliant. When you boil the potatoes do you mean thoroughly cooked through or "parboiled" . .?

just par-boiled GF, enough that they don't discolor when exposed to the air.  :)
