Name of Recipe:
Rice & Spinach Pie
Number of People:
6 serves
Preparation:
300g cooked rice (I used leftover Bron's garlic rice)
40g butter or margarine, cut into pieces
4 shallots, chopped (green part too) into 3cm lengths
4 eggs
375mls milk (1-1/2 cups)
170g cooked spinach, chopped finely
180g low fat tasty cheese cut into cubes
40g parmesan cheese, cut into cubes
S & P to taste (go easy on the salt)
Grate cheeses in TMX and set aside - 6 seconds/speed 7.
Without cleaning the bowl, add the eggs, put the butterfly into place and mix for 10 seconds on speed 4.
Remove the eggs to a bowl and clean the TMX bowl.
Add the butter and melt at 100o for 1-1/2 minutes on soft speed.
Add the spring onions, chop for 5 sec/speed 6 and saute 2 minutes 100o on soft speed.
Add all the other ingredients into the bowl and mix it all together for 1.5 minutes on reverse, speed 2.
Pour into a greased 1.5 litre (25cm) pie dish and bake 190o for 40 minutes.
Remove from oven and let rest for 10 minutes before cutting into wedges to serve.

Tips/Hints:
English spinach is best for this recipe but you can use the frozen variety also.
It is a good way to use up leftover rice and spinach rather than making it from scratch. You may have these items in the freezer so can whip it up in no time.

this sounds exactly like my sort of dish! and something the rest of my family would hate LOL i will have to make it for my lunches

Great work JD - reminds me of an old Womens Weekly recipe that I had forgotten about for a crustless quiche that I used to do. I am not a pastry person.

It is scrumptious Bron - DH loved it. I think it was your steamed garlic rice which gave it such a flavour boost too compared with normal plain boiled or steamed rice. We had it hot and then I zapped it each time we had a piece. It can also be eaten cold but I prefer hot during this weather. Would be nice in summer with a salad, hot or cold.

Well, hate to rub it in...but we are just coming in to summer! You should see all the gorgeous hunks outside with their surf boards. I have a fantastic view (not just the sea!)
Will try it cold with a nice green salad, Thanks JD I always have steamed rice in the fridge!

Would love a visit! We are very lucky to live where we do, shame the kids don't realise just how lucky they are! I would have loved to live on the beach as a teenager! Today all the hunks are out with their kite boards, as its quite windy!

This is delicious! I baked mine in a slice tray, so it's a nice alternative to zucchini slice. Great for picnics. I think it would be good for school lunchboxes.

Thanks for this one Judy - have made one similar over the years but had forgotten about it and needed to use up some silverbeet.
VERY forgiving recipe, not sure how much rice I made
added some chick stock as didn't have any yummo garlic rice, added oodles of silverbeet, some peas that needed to be used and then realised I had run out of tasty cheese!!!
So just threw in some extra parmesan - I think about 100-120gms all up and the result was DELICIOUS!!!!!!!!
the only thing I would change next time is to cover the dish as I don't like the crunchiness of the rice on the top - still eating it though!!!

Thanks for trying it Tam, it's one of my favourites and goes a long way. Freezes OK too if you use all fresh ingredients.
