Hi Harper,

To convert plain flour into self-raising flour, add two teaspoons of baking powder to each cup of plain flour. Adding one teaspoon of cream of tartar and half a teaspoon of bicarbonate of soda to one cup of plain flour gives the same result.

I don't keep SR flour in the house any more because I never remembered to make which was which.  I now only have plain flour and a container of baking powder so I just add the baking powder when it is needed.  You can get big packets of baking powder from places like Campbells cash and carry if you do a lot of baking.  Just remember if you are doing flour by weight to add the baking powder to the weight of the flour.  I always forget (doesn't seem to make a lot of diiference).

You can make your own baking powder too the recipe is in the EDC and so is the method for making your own SR Flour. Don't have it at hand to tell you the page numbers but it is in the basics section at the front  ;)
