Just made a batch of these Amy and they look and smell delicious.  :)
Going to put some in my freezer and take some to DD for her kids.
Will have tonight with salad for my dinner.
I also put in some Parmesan as well as cheddar simply because I love Parmesan.

Good idea using Parmesan, my mum and SD love it too so I might sprinkle some on top next time I make these ;)

I've made some mini ones for DS birthday party on the weekend and they look delicious!



And I also made some individual sized quiches for my best friend who is quite sick at the moment and her diet is very limited but eggs are really good for her.  She can't have any meat so I omitted the ham and added in some red capsicum and spring onion instead.  Looks kind of Christmassy with the red and green!  Hope she likes them.

Made these today to take to school tomorrow.. Cooked corned beef first then mixed all up and put in a large bowl as like amy said is a bit too much for thermie.. Think it made around 90 mini muffins but hard to say exactly as they kept disappearing lol.. Told they are very moorish lol.. It surprised me as a quiche as quiche for me is always egfs and cream but with oil and flour why not.. They are yum and the only thing i did was put 1/3 of parmesan for the cheese and the rest tasty.. Thx amy ..



Oh and lovely with the corned beef thx hally :)

So happy i got to cook today and cooking again tonight .. Happy dance :)

DH has requested that I make these for his work lunch next week. I will use gluten free flour and make them mini muffin size.

These are nicer the next day.. Having a few for breakie lol! ds turned his nose up then said they do taste nice eventually ?????? Lol. Think the green bits threw him off ..

I really need to make these. I know we would love them but never have zucchini in the fridge when I think of them.

I still haven't tried these either must try soon, I want to make them as minis do you need to put paper in the bottom or can I just spray?
