Egg intolerance. Can't eat quiche, scrambled eggs, poached eggs etc. so far I am ok with eggs in cakes etc.

The mini pei maker is only half the size of the regular one Amy so I think they should turn out really well.
Yes, any less fat and calories in the diet is great. Can have the tasty treat and don't feel like I'm missing out.

I tried experimenting with these to replace the bacon with tuna, which would make them even healthier, but they were a bit bland without that extra little bit of salt from the bacon :-))

These tasted great Amy, even my fussy little beggars loved them! To me the oven baked ones were better but i'm still a novice with the pie maker so others may have better luck.

Great recipe Amy.  I made these today for a morning tea and they were all eaten up by mums and kids.  They were delicious!!!  Best thing was that the kids didn't even know there were veges in there.  Next time I'm thinking I might also put in some blended up capsicum (just to increase the hidden vege count!).

Thanks again, I love my mini quiches and was looking for a good TM recipe - this one is perfect.

This is a great recipe to hide extra vegetables in, and the capsicum sounds like a great idea. I sometimes put corn kernels in mine as well ;)

Amy my DH told me to tell you these are delicious and our visitors this afternoon also went ape over them.  They went home with the recipe.

I made one lot using the mini muffin tray and a normal sized muffin tray for the remaining mixture.  We had some of the bigger ones for lunch (hot) and I offered around the tiny ones for afternoon tea (cold).  Both delicious, hot or cold but the mini ones were my favourites.  I have enough left over for the grand-kids tomorrow along with some chicken rolls when they visit their Grandpa for his birthday lunch in case they don't want the seafood risotto I intend making.

I did saute the onion and I added some corn kernels and parsley to the bigger ones. Thanks for sharing this easy recipe with us.

Amy, this is amazing! I made it this morning to take to a birthday party and half of then aren't going to make it! DS's dad, who doesn't eat ANY vegetables even ate it, liked it and didn't know the zucchini was in it. I will definitely be making this again (possibly for dinner tonight... Lol). I'm putting a list of recipes together to make for DS's 3rd birthday party in October and this is on it! Thank you!!
