Hi it's me again!

What other veg can be used? It's winter here and not courgette/zucchini season here? Any suggestions please, oh without cheese as per above.

Hey DJ, I think you could use capsicum, carrot, corn kernels, sweet potato or a mixture. Just chop them like you would the zucchini. The corn might be nice in a chunkier texture though. Hope this helps! :D

Amy - just made 24 minis and 12 regular size "muffins" - minis for DS to take on car trip - regular for a neighbour and me . . . :D  They are just soooo good!!  Thanks again for this!!  (Only tweak was to use up some left over smoked ham rather than the bacon . .)

DJ - as zucchini has a high water content you may need to add more liquid to the mix if you are using different veg.  :)

I whipped up a batch of these last night when I learnt I was going to be able to go to my GD's birthday lunch - 2 dozen mini quiches for the party and 1 dozen mini loaves for us.

Aren't they just great, Judy!  Am thinking now of trying some additions in some of them . . chilli flakes or fresh; parsley, etc etc. . . .just an awesome recipe . .!! :D

Okay I finally have a courgette! Bought at the market today!

Just looked at recipe again, remember no cheese for me so extra carrots  yes.

Don't laugh out loud just found we also used almost all the bacon today.... A WEE bit left, but I also have sausages... What about them?

Anyone tried?

So a cheeseless, sausagey version of Amy's wonder dish may be made tomorrow or Monday.
Will freeze remainder as am home alone til Friday night.
