I made this recipe a couple of days ago but had no oil to grease my little pans, so I put a sheet of baking paper in a pie dish and cooked it like that. I also subsituted 2 small tins of salmon for the bacon, and added some stock since there would not have been any saltiness from the bacon. I added carrot too :)

I love this recipe, its so versatile :D

Here is the vegetarian version using Sanitarium soy rasher. Enjpyed by all.

It is a good vegetarian alternative. I have used it many times and no one knows the difference when it is chopped up.
When we had our Blue Mountains get together, we went to a vegan restaurant and I had the BLT which used Sanitariam soy rashers. It was OK in a big slice, a tiny bit thewy but that may be that it was over cooked slightly.

Made a double batch of these yesterday :D Chopped everything individually in TMX and transferred to a large mixing bowl, then mixed batter in TMX and added to mixing bowl. Still a bit messy but less messy than when I tried to mix it all in TMX ;)
Used gluten free flour, came out just as nice as regular flour :D

Hi Amy, I was holding a pink ribbon day for cancer and was providing some of the food, and thought I needed something hot and savory made your quiches, I used puff pastry as the base with the ends overlaping for effect and it was a hug sucess and everyone loved them went in a shot, pity I didnt make more, very tasty. loved them.

These are delicious Amy. Thanks for the recipe. The kids had them in their lunches and thought they were even better cold the next day. Great alternative to sandwiches or rolls. When I made them, I only got to cook half the batter as I had to suddenly go out. I cooked the remaining batter the following day and there was absolutely no difference in taste or texture. They are terrific.
