Hally the slice looks great.  As to the choc problem,  if choc gets any moisture in while melting the result will be that grainy product that you experienced (same occurs if you dip a wet spoon into a bowl of sugar!!)  We direct students to the Elements of Chocolate site to discover the ups and downs of cooking with chocolate!  :)  :)
