Orange Creme Filling for Cakes
Ingredients:
25g butter
2 1/2 cups icing sugar
3-4 strips orange zest, to grate
25ml fresh orange juice
1/2 tsp vanilla essence
Milk, as needed (approximately 20ml)
Preparation:
1. Grate orange zest for 1 minute/speed 8 or until fine, scraping down sides of bowl as necessary. Set aside.
2. Place butter and 1 cup of icing sugar into TM bowl and mix for 30 seconds/speed 4.
3. Add orange zest and juice. Mix for 15 seconds/speed 3.
4. Add another cup of the icing sugar. Beat for 30 seconds/speed 4.
5. Add the vanilla, remaining 1/2 cup of icing sugar, and 20ml of milk. Mix for 15 seconds/speed 4.
6. Add more milk if creme is too dry. Mix again on speed 4 until combined.
Notes:
This creme filling is very thick so it holds well between layers of cake, even heavy ones such as Sim's Flourless Chocolate Cake () which is the cake you see in the pictures.
I used a knife dipped in hot water to spread the creme more easily. I tried just using the spatula at first but the creme just rolled across the cake and got lots of crumbs caught up in it.
