Ingredients:

700 g aubergines
400 g peppers
150 g onions
600 g tomatoes
1 bayleaf
200 g olive oil
1-2 tsp salt
1 tsp pepper
Chilli, according to taste


Preparation:

    * Chop aubergines 8 secs/speed 5. Set aside.
    * Chop peppers and onions 5 secs/speed 5. Set aside.
    * Chop tomatoes for 5 secs/speed 5. Now add all the ingredients incl. spices and oil to the TM bowl.
    * Cook for 45 mins/100°/speed 2 without MC. Place the cooking insert on top of the lid to stop the sauce decorating your kitchen.
    * If you would like a smoother sauce, you can puree it on speed 6 to desired consistency. Pour into jars and close tightly.


Tips/Hints:

The recipe contributor recommends this Rumanian speciality spread on bread or served as a sauce with grilled meat. It can also be used as a sauce for pasta.

Does sound good -seems like all the mediterranean countries have some form of this mix.  I love ratatouille/pistou/whatever you call it.

i loved it, dh didn't mind it (he's not an eggplant lover) and the kids said it was yum (i told them it was gravy ;)). we had ours with grilled sausages / chevapi sausages and veg steamed in the varoma. i whizzed mine at the end to make it more like pasta sauce.

I made this tonight.  I only used 20g olive oil as I thought it might be a typo?  It worked fine with only that much.  It made heaps and we served it as a pasta sauce.  I also reduced the cooking time, as 45 mins seemed ages for a chopped-up veg dish.  It was fine after 35 mins.  We didn't whizz. :)  Oh, I forgot to put the bay leaf in, but added some dried mixed herbs before cooking commenced.  10/10
