Warm lunch box ideas that you can freeze

Hi there, I would like to make and freeze some lunch box food over the holidays so that when the teenager is back at school, she can grab it and run. I had a look at some of the old threads and they all seem to cater for much younger kids. I was thinking of making frittatas and French toast. I have looked and looked for the baked bean and egg in a bread casing recipe but can't find it. Any other ideas? I especially want food for these cold winter months

Courton is this what you were looking for? Sorry I can't lnk, but copied it for you.
My baked bean cases which were published in Additive Free Lunch Box Ideas are always a winner (and I even won a prize for best additive free lunch box recipe)
•12 slices wholemeal bread (crust removed)
•2 tablespoons melted butter
•1 can 420g baked beans
•4 eggs
•Grated cheese
1. Preheat oven to 180 degrees. Using a rolling pin, roll bread slices lightly until thin. Brush one side with melted butter.
2. Press buttered side down into a 12 hole muffin tin. Bake for 10-12 minutes or until golden and crisp.
3. Spoon baked beans evenly into the bread cases. Lightly whisk the eggs and pour over the baked beans. Sprinkle grated cheese on top of each bread case.
4. Bake for further 15-20 minutes or until hot and golden.
These freeze well and can be eaten hot or cold.
a great way to get extra protein into kids diets.

I find the easiest thing to do is just make a bit extra dinner and the leftovers can be taken for lunch. I loved taking leftovers when I was at school and love it now for work.

My kids love pizza, fried rice, maddy's cheese and bacon rolls, soup and pretty much anything that we have had for dinner the night before.
Their absolute favourite is my MIL pastitsio (greek pasta with a thick béchamel sauce on top)

There are many varieties in the baked bean cases. Just fill them with anything. Leftover mince, creamed corn and diced bacon etc.

My MIL has her own recipe but does use the thermomix to make the bachemel sauce.
She makes enough for 16 people plus left overs for lunch the next day if there is any left over.

Dizzy girl, your recipe is a winner! I put bacon in some and spinach and bacon ( as well as baked beans) in these tartlets. It took longer to cook because of my changes but that is fine!
