Lemon Sponge Pudding

Cooked for  3 - 3 1/2 hours in a slow cooker.

Ingredients
125g butter
4tbs golden syrup
100g sugar
Grated rind of 2 lemons
2 eggs
200g srf
2 tbs milk
2tbs lemon juice
3passion fruit, didnt have them so left them out

Method
1. Butter, Sugar & grated lemon rind, add to bowl with butterfly inserted. Cream speed  4 until looking nice & creamed.
2. Remove butterfly, add 1 egg, speed 4 until mixed, then 109g flour, then 1 egg, then another 100g flour until mixed nicely.
    Stir in milk & then lemon juice.
3. Use pudding basin, line base, drop 4 tbs of golden syrup into base. (My pudding bowl is 19 cms across)

4. Spoon mixture in. Level the surface & cover with greaseproof paper & tie with string.
5. Put bowl in slow cooker, Pour boiling water 1/2 way up sides of bowl.
Cover cook on high for 3-3 1/2 hours.

If you have passion fruit, scoop out & pour over pudding.

This s a lovely winter dish, we all thoroughly enjoyed it.

knittercook - Made this tonight and realized there are no instructions for adding the milk juice, I took a punt and added them to the batter? The cake was delicious and moist but there wasn't any sauce, so next time I will only cook for 3 hours and add a bit more golden syrup, but I will definitely be making this one again.

Jeninwa - Made this last night Hally, everyone loved it, but it was very dry, no juice, only cooked for 3 hrs added more golden syrup than stated. Think it needs liquid added to the golden syrup, like a self saucing pudding.

Thanks Hally, I think we only have one or two pudding basins. I hope one of them is the right size! :)

It looks lovely Hally. We had about 8 lemons on our tree and we're in the process of making things to eat them.

How are you feeling?

Was given a big bag of lemons yesterday so looking for lots of lemon recipes, this will be one for sure, thank you Hally  :)
