Fresh Yeast

Hi everyone  :)

I managed to find some fresh yeast and I am not loving it  :(  I have used it twice ( a buttermilk loaf and pizza dough ) and they both had a different taste when compared to using dried yeast.  Is that normal?

I have been putting the fresh yeast in with the warm water and putting on sp 1/2 for a few secs to dissolve.

The smell of the fresh yeast turns my stomach as soon as I cut it up and I think that might be having an impact on me eating the final product, reliving the terrible smell  :P

Does anyone else use the fresh stuff????

Bec,  there is no reason why you can't use dried yeast.  personally , I love the taste of fresh yeast in bread,  but find the dried more reliable.

Yeah I have used both fresh and dried but was so excited when I saw fresh yeast that I had to buy it to try  :D

I love fresh yeast, but it can go off quickly.

For quantities use half traditional dried ( needs activating in water) to fresh, and for fast acting easy blend ( mix in flour) use one third of fresh quantity.

Berlinets kitchen will post out fresh yeast monthly in Uk but it is expensive.

If I can find any fresh yeast I only buy a little bit and go mad making breads etc. I usually use dried yeast though and keep it in the freezer. I never have any fails that way. ;)
May all dairy items in your fridge be of questionable vintage.

If you chat  up the people at Bakers Delight or  Brumbys  they will sell you small amounts of fresh yeast.

I tried a few bakeries in my area Gert and not one of them would sell me any  >:(  Happy to use dried now, more convenient.

I bought the fresh yeast in a 150gm block in an organic food shop on the Sunshine Coast in QLD.

I know JD some can be mean about it but I have one fine baker who will always sell me small amounts. Mind you I had to chat him up a bit and actually buy some of his crappy  bread then spin him a story about some special bread I wanted to make and now he just sighs  and charges me two  bucks.

I love using fresh yeast for a treat, i put it in with the water and cook for 2 min 37 degrees speed 1.
I don't know if it is my imagination but the bread seems lighter!

I always use the dried yeast and have not had any problems but haven't tried fresh yet. Does it make a difference to the end result. Showing my ignorance here ;)
