Hello from Launceston
« on: July 21, 2012, 10:27:35 pm »
Hi my name is Wilma and I own and operate a little cafe in Launceston with my husband Gary and two amazing staff.  I have recently purchased a Thermomix and am experimenting with Gluten Free recipes with differing success.  Does anyone have a fool proof recipe for muffins that rise up beautifully, and are moist and tasty?  I have perfected Cyndi's GF bread through sheer perserverance with my oven, I had a sinking problem with every loaf, but cut back on the proving time and reduced the water a little and now have a perfect loaf every time.  Looking forward to hearing from you.

Hi Wilma, welcome to the forum.  The TMX must be a great help in your cafe for whipping up batches of scones, muffins, biscuits etc.  I have found the following using the TMX

blueberry muffins from agagfaf.com

double chocolate muffins from Recipe Community

Berry & white chocolate muffins from Brazens blog

This carrot cake of Brazens could be make into muffins
