Chocolate delight ( tray bake)
« on: July 26, 2012, 03:48:46 pm »
This is a easy and popular tray bake  - not Chookies lovely pudding by same name.

It came from a cook called Dot on a Queensland cattle station, 30 years ago!

Mix in a bowl
1 cup SR flour
1 tbs cocoa powder
1 cup crushed cornflakes ( I made that approx 2 cups and 2 small handfuls before crushing)
1 cup coconut ( not sweetened)
1/2 cup sugar

Melt 6 ozs ( 170 grams) butter, 1 dessertspoon golden syrup, 1 tsp vanilla.
Mix into dry ingredients.

 *:
I first crushed cornflakes speed 3 or 4  few seconds til done ( not too small) then put in with dry ingredients in another bowl.
I melted butter, syrup, vanilla at speed 2, 60o
Then added the mixed dry ingredients on reverse speed 2

Put in tray, I used half of an expanding tin.
Bake til done, for me 18 minutes baking oven Aga approx 180oC.

When still warm, cover with thin chocolate glacé icing. Cut into squares.

Ps forgot DD no longer likes coconut.
Will use oats next time instead and report back.
Enjoy.

Don't see why not, but they are crushed cornflakes. If you crush crispies it will surely be dust!

My crispy recipe is butter, sugar, honey. Bring to boil add crispies put in tin cut into squares.

Or butter, sugar, syrup, cocoa powder same as above. Can look for quantities another day, am in bed now.

Yummy, another one to try.

Bumping as my DD addicted to this in her new life, despite originally saying didn't like coconut. Takes in her lunch box daily. Cheap and so easy to make.
