Chicken with German "zigeunersauce" (gypsy sauce)

This recipe originates from the German Thermomix forum and is lovely, so I thought I would share it with you all.

Ingredients:
4 small turkey or chicken schnitzels, or chicken breast
2 onions
400 gr red/green capsicum
4 sweet/sour gherkins
4 pieces prosciutto or ham
4 pieces of cheese
Salt/pepper

750 g water
400 g rice

For sauce
70'g tomato puree
250 g water or cooking fluid
1 TS paprika
20 g cream
1 TS vegetable stock concentrate
1-2 tbs flour

Cut onions and capsicum in big pieces (I don't use Thermie here, since it will cut it up too finely).
Cut gherkins in pieces. Put onions, gherkins and capsicum in bottom part of Varoma.

Line the top part of the Varoma with wet baking paper. Put salt/pepper to taste on the meat. Put piece of ham on top of meat and cheese on top of that.

Rice in the basket, rinse.

750 g water in  *: . Put rice basket in  *: , Varoma on top.
25 minutes, Varoma temperature. After 15 to 20 minutes check rice and take that out if cooked. Keep it warm (unfortunately we do not have Thermoserver in Holland).

After 25 minutes take Varoma from jug. Keep 250 g from cooking liquid, put that in  *: with rest of sauce ingredients. Heat 3 minutes 100 degrees speed 4. After three minutes add veggies from Varoma to sauce and cook for 1 minute 100 degrees,  :-: 1 or 2.

This sounds nice. I'm like the idea of the gherkins, they give a lovely taste that I always associate with German cooking.
May all dairy items in your fridge be of questionable vintage.

We really like it, even DS loves it. And he is not too keen on trying new things...

Made this tonight for supper and it's very good.Both DH and DS like it.Did improvise on a couple of ingredients and tweak the method.
I put sliced cheese first on the chicken breast then wrapped a slice of prosciutto around each breast.
Only had one fresh red pepper (capsicum) so made the amount up with roasted peppers from a jar.Sliced one onion and one shallot into rings.I used two pickled sweet/sour cucumbers sliced.
Didn't cook rice.
As Jacq didn't specify the speed to cook the chicken and veg I used speed 4.
Changed the sauce a bit.Didn't use flour but 30g cornflour diluted with 3 Tbsp water.
Did blend the sauce for a smoother texture.
Makes a lot of sauce.
Served it with jacket potatoes.
