Beetroot dip - EDC

I made this dip over the weekend. The recipe is quite unclear as to what type of Beetroot to use, fresh or tinned? I bought fresh, so I did a bit of a combo of this recipe, but first baked the peeled Beetroot wrapped in foil with the garlic, cumin and oil for 40 min at 180 degrees. I let it cool and then poured into TMX with the yogurt.
The result was pretty good according to Beetroot fans who I served it to.

This must have been an addition to the original EDC hopefulcook - it's not in my 2008 edition.

Hi hopefulcook,  Given the method asks us to drain the beetroot, I figured the submitter wanted us to use tinned baby beetroot too.

Beetroot makes a tasty dip.  I have tried this one but I think I prefer the one I make with leftover beetroot salad, just mixed into a 250g packet of cream cheese.  That is made wth raw beetroot, carrot, apple, and a few other nice flavourings.  Do try it if you're ever wondering what to do with B Salad leftovers.  Very morish!  :)

I figured tinned too, but thought fresh would be better  :)
I have eaten the Beetroot salad at demos, but I am not a huge fan, so have not made it myself. I was worried raw Beetroot might be too much as a dip?

I saw that one too, but was already doing a basil, cashew and Parmesan pesto and thought it would be too much!
Overall I was happy with how I did it. Also served with some semi dried fomatoes,, some of Gert's pâté, the pesto, some olives and these very tasty fresh anchovies I found at a gourmet shop. I am still dreaming of those little fishes!!!

I loved this dip! So fast and easy and great flavour. I also used the leftovers as a dressing for some boiled potatoes. Will be using it for my potato salad from now on! ;D

I made this but only put a small spoonful of yoghurt instead of the 100gms - was really nice for something different.

I made this today using plain roasted beetroot instead of tinned and sour cream instead of yoghurt. Yum!!

I made this as one of my first efforts and was a bit disappointed..

I used raw beetroot and then added some of my own additions such as dill and horseradish.

The flavours were great however I found that despite blending on high speed the ingredients didn't particularly emulsify together and it turned out quite grainy and fibrous.

I tried adding some plain yogurt but to no avail....

Does this mean I have to use cooked or tinned to get a smooth consistency??

I always use cooked - I just rub with some oil, wrap in foil & bake until soft. 
I cool the beets for a while, peel (wearing disposable gloves) & mulch them up with salt, garlic, lots of cumin & sour cream or soft cream cheese.
It's always a hugely popular dip.
