Fast & Easy Choc chip Muffins

This recipe only makes 8 muffins but it could be doubled for larger quantities. This amount was perfect for us. My only problem was that the choc chips sank to the bottom but because the recipe is so light and fluffy I would do it again in a flash.
Preheat oven to 180
o
C, fan forced.
Line a muffin pan with 8 muffin paper cases.
Ingredients
100 g soft margarine
100 g castor sugar
2 large eggs
100 g self-raising flour
100g chocolate chips
Place the margarine, sugar, eggs and flour into the TM bowl and mix for
10sec/speed 6.
Add the chocolate chips and mix for
5 sec/reverse/speed 2.
Place tablespoons of mixture into the 8 cases and bake for
20 minutes in pre-heated 180
o
C oven
until golden brown.
Transfer to a wire rack to cool.

Deniser - So fast and simple - good to have a recipe to whip up in a flash. DH just declared these a keeper. Agreed Judy - muffins are just too big for me too. For Culidh - I used the Multix 100 pack Muffin cases from the supermarket and the used the muffin tin that has 12 holes in it.
JulieO - they are lovely, thank you Judy. I made into 6 muffins and out of the 100g of choc chips, I took out 24 (4 for each muffin) and these I pushed into the top of the batter of each muffin after putting in the papers. The others that you can see were from the mixture, most of them stayed within the muffin but a few also sunk to the bottom too. I saved one for DH for when he got home from work (have frozen the rest). He said it was the nicest he's had in quite a while.
I've also made a batch using my mini muffin tin without any papers. I got 22. They were a perfect treat for my grandson each day to hold in his little hand. I did cut down on the sugar and butter content too.
Suzanne - they were a real hit, my 7yr old cake/cookie/muffin connoisseur thought they were delicious and has asked for them to be put in his lunch box this week, so I'll be making these again, thanks Judy.
deedub - I made these as mini muffins for the kids and they love them. Thanks Judy, will definitely make again.
Cuilidh - they were not as 'flat' as yours look to be JD - mine had risen and looked quite different. Sadly, I also had a case of sinking chocolate but had scattered some choc bits on the top so it wasn't so noticeable. They are really nice and so quick and easy to make. It took longer to get the mixture out of the TMX jug and into the muffin tins than they took to make!
Hally - It made 5 large ones for me. I used caramel chips. Taste is great, love the lightness. I wouldn't make large ones again, too heavy the chips, all at the bottom too. I also would use liners next time as some of the chips are still in the muffin pan. Just gave 1 to cp, verdict, delicious. Going to make more but smaller or use muffin liners & probably double the recipe. Thanks again JD. All 5 gone in 1 day.
Gert - As you know I am not a cake baker but I did quickly make these today just to see if I could, to use my lovely new silicone muffin thingys and to also use up some choc drops from my freezer that were given to me. Win win all around. Too easy and really nice.

Looks good, JD, maybe sprinkle the choc chips on top as well? What size muffins were they - small, medium or large?

Thanks Judy - just made these - (in the oven and looking good) while I was tidying up the kitchen after breakfast.
So fast and simple - good to have a recipe to whip up in a flash.

Marina, I used the normal size muffin tins & liners and you can see from the photo how much the mixture filled them - I would say medium. I am not a lover of huge muffins, they are just too big for me and I usually share one. Good idea about sprinkling some of the choc chips on top as well

The muffins looked the same as Judy's so did not take a picture. thought about doubling the mix but so quick and easy just made 8 and saved room in the freezer.
