Roast Leg of Lamb - how many ways??

We had a lamb roast on Sunday night and now looking for inspiration to deal with the leftovers. We usually have it as cold meat in sandwiches and then either shepards pie or lobscouse. Getting a bit bored with this scenario so my question is:
What do you do with your leftover roast leg of lamb??
Also does anyone make a soup stock with the bone?

If I have leftover roast I put it into meal sized lots in gravy and freeze it, then have a quick easy meal on hand and we don't have to eat the same thing night after night after night.

We like it warmed up in tortillas, served with salad one of our favs
i actually cook lamb for this purpose.
Also nice lamb & veg pies.
My mum used to make lamb hash.
Yes sometimes I do make stock to use for gravy for thext roast lamb or casserole.

We rarely have much left on a roast to make another meal, so it is usually used up in cold meat sandwiches with so relish

Hi Keiramax,
When I have left over roast lamb, I normally cut it in small strips and use it to make a bolonaise sauce instead of using mince. It is yum with some kind of plain pasta

I recently used leftover lamb in a risotto with pumpkin and rosemary. It was very nice
Otherwise it get used in toasted sanwiches, quiches, frittata, pies...

Top it with lashings of rich brown gravy, and pop in a freshly baked rolls.
Sometimes I throw it in a pasta dish, but hubby usually eats it in toasties with gravy and lts of cracked black pepper & cheese.

Thanks everyone. The with gravy reminds me of the yorkshire puddings with lamb, onions and gravy. YUM

We have lots of ways. The trick is if you know you will have leftovers is to make extra gravy at original roasting makes next day food fast and easy to prepare.
1) Minced up with left over veggies, some fried onion and some gravy and mash on top for a shepherds pie. Serve with more veggies. Extra gravy heated for on top too. We had an excellent cottage pie last. Isn't with left over pot roast beef. Had beef sandwiches too, and one. One more lot or beef rolls today. Four meals from one medium joint of silverside.
2) Rissoles. Minced, added to fried onion, add a few fresh breadcrumbs, lots of seasoning, bind with a raw egg, add a bit of Worcester sauce too and make into patties. Fry. Delic. Can serve On plate or in rolls. When DD was small she always preferred these to burgers.
3) Tatie pot pie. Slice layer in dish with sliced onion, sliced carrots repeat seceral times with meat, onion and carrots, season ach layer, cover top with sliced potato. Pour in gravy until almost up to potato layer. Cover and cook in oven until veggies cooked then remove top to crisp potatoes.
Same recipes work with left over roast beef although we eat more cold beef than lamb. DH doesn't like cold lamb.
Also work with left over gammon joint, chicken etc. just change seasonings or sauces to suit eg mustard.

If I have bucket loads of left over roast lamb I make it into shepherds type pie, with mint added into the meat mix.
Otherwise if there is only a little bit DH has it in sangers, but I can't stand cold roast lamb..... smells sooooo sheepy

My nan always used to dip the leftover lamb in a batter and then shallow fry. I used to love it but havent had it in years!
