Mulligatawny {chicken curry & rice} Soup

Mulligatawny Soup
Serves 4-6

Ingredients:
1 small onion, peeled and quartered
2 stalks celery
1 carrot, peeled and chopped
50g butter
1 ½ tbls plain flour
2 tsp curry powder
2 tbls TMX veg stock concentrate
1L water
5 tbls basmati rice
1 apple, peeled and diced
1 chicken breast, diced
Pepper
Pinch of dried thyme
125ml thick cream

Preparation:
•   Put onion, celery and carrot in bowl. Chop for 3 sec on speed 7.
•   Add butter. Sauté for 5 min at 100°C on speed 1.
•   Add flour and curry powder. Mix for 3 sec on speed 4 to incorporate the flour into mixture.
•   Cook for 5 min at 100°C on speed 1.
•   Add TMX stock, water and rice. Cook for 5 min at 100°C on reverse + speed 1.
•   Add the apple, chicken, pepper and thyme and cook for 15min at 100°C on reverse + speed 1.
•   Pour in cream. Mix for 5 sec on reverse + speed 2.
