ok here is the bunny cake i made for my DD for her second bday today..i was tired and in a hurry but it turned out ok..i also decided to attempt to replace the cocoa by citrus and it tasted quite ok just wasnt what i expected as i used the brown sugar as usual and it turned the cake a light brown kind of like the colour of a spice cake haha you dont notice it at allwith teh chocolate version but plain or other flavours it overpowers it..DH loved it anyway next time ill try the white or raw sugar with the citrus..prepared recipe as is just took out the cocoa and added the zest of a lemon and a lime, 3/4 cup grated dried coconut (additions to be folded in at the end of the mixing time for the rest of the ingredients)..and i added a few tablespoons of lemon juice..i think the brown sugar was a little strong and overpowed a little the zest..anyway will try again some time soon with raw sugar once we get through all this cake and repost if it works out how i want it to!

This is a great recipe!
I made only half the quantity because I didn't have enough ingredients. Popped it into a ring pan for about 40 minutes and it was perfect.
Thanks for sharing this one! I think it'll become a regular around here.

This is a great recipe, Jabba! I think it needs an award, just like Baf64's Creamy Chicken Recipe.

I've just made this in a small baking dish and it turned out beautifully, didn't rise in the middle and crack like so many of my cakes do.
My tweaks were as follows:;
I use only plain flour, so I added 2 tsp baking powder and 1 tsp bi-carb soda. Also, cut down raw sugar to 280g. Still plenty sweet enough. I had HUGE (67g) eggs, so only used 3. Also, I used the traditional method, creaming butter and sugar, adding eggs etc. just to make sure that it would work out for me!!

I was so thrilled with it that I tried a Vanilla version today, with the same stunning results. I still only used the 3 eggs (even though they were a bit smaller) and replaced the 40g cocoa with 40g custard powder.
It's lovely, even better than my Hilight Cake. I'll make a batch of buttercream and ice it tonight. Family will be ecstatic!!
